How to Make Sauerkraut with Probiotics

Marcela Benson

This guide details how to prepare cultured cabbage using added probiotics. It opens by describing fermentation as an ancient food preservation approach utilizing lacto-bacteria existing freely in nature, a custom observed across nearly every civilization throughout history.

The featured preparation produces eight cups. Ingredients include two sizable white cabbage heads, salt, dulse flakes, probiotic powder, caraway seeds, carrots, radishes, and mini peppers.

Preparation begins by shredding the cabbage, then manually kneading it with salt until moisture releases. Once pressing produces sufficient brine, blend in the probiotics. Construct alternating tiers of spices, carrots, radishes, and peppers with firmly compressed cabbage inside the vessel, ensuring liquid extends at least one quarter inch above the top layer, supplementing with spring water if needed.

Place weights on top to submerge everything. Set the vessel aside at room temperature for twelve days.

Once the period ends, remove weights and move the finished product into compact covered jars before chilling. The completed item pairs with greens, bread preparations, or rolled fare.
